Guillermo del Toro is certainly no stranger to putting his name behind projects which either never see the light of day or wind up moving forward without his participation, so before you start to believe that the following is something which is actually in the works, take del Toro’s own words to heart:

Yahoo Movies spoke with Guillermo del Toro and asked him what his vision of a Star Wars film would be like, after going out of his way to state that the project is definitely not real, Guillermo del Toro spilled the beans on exactly what kind of Star Wars film he’d make and which character would be featured.
I would do the sort of Godfather saga that Jabba the Hutt had to go through to gain control. One, because it’s the character that looks the most like me, and I like him. I love the idea of a Hutt type of mafia, a very complex coup, you know? I just love the character.
While a Star Wars film centering on a giant slug may have seemed like an odd prospect just a few years ago, the new STAR WARS ANTHOLOGY banner which will deal with all manner of Star Wars spin-off's gives hope that some lesser known stories and characters could be ripe for the big-screen. Could Jabba the Hutt be among those to find himself featured in an upcoming Star Wars film? Stranger things have happened I suppose, but I guess the question that I’ll pose to you fine folks is…would you watch a Jabba the Hutt mafia flick?
